The cocoa flavour is strong, confident and layered, with real depth and a lingering finish. The gluten-free buckwheat adds a pleasant nutty character rather than dairy-like sweetness, so this reads closer to a well-made dark chocolate than a milk alternative.
Worth setting expectations accordingly: anyone hoping for a true milk-chocolate creaminess may be disappointed, but those after a confident, characterful dark bar will be very satisfied. It’s also worth noting that Ghanaian cacao sourcing carries a complicated labour history, which is why many bean-to-bar makers avoid the region — making Tosier’s choice notable either way.
