The bar has an interesting proposition, and it comes with a pronounced coconut aroma, accompanied by a sweet, milky chocolate character. The floral quality of the coconut is particularly noticeable and tends to dominate the aroma, although there are softer hints of clotted cream and fudge underneath.
What is noticeable is that the same balance carries through to the tasting. Once the initial coconut character subsides, more delicate notes begin to emerge, including floral hints reminiscent of violet, alongside fudge and biscuit.
The chocolate itself is well balanced, with the sweetness becoming more apparent towards the finish and helping to round out the flavour rather than overwhelming it. The texture is smooth and creamy, giving the chocolate a satisfying mouthfeel.
Gorse flower is clearly the defining character of this bar, but I found its floral, coconut-like quality rather pronounced. One flaw for me, is that it masked some of the more subtle flavours of the chocolate beneath it. The bar is enjoyable and well made, but I was left wanting a little more of the underlying chocolate character to come through.
