Part of the Mountain line, Ritual uses local raw honey, sourced from hives around the Wasatch mountain range, to create the bar’s honeycomb toffee, giving it a distinctive sweetness and satisfying crunch.
One thing you notice immediately when opening and snapping the bar is the quality of the temper. Each piece breaks with a clean, precise snap, followed by a gentle pop as you take the first bite. The texture is beautifully executed, with the crisp honeycomb toffee adding an enjoyable contrast to the chocolate.
With a core tasting note of honeycomb, this is an excellent bar. The combination of organic cacao, organic cane sugar and honeycomb toffee — itself made with organic cane sugar — is remarkably simple, yet the result is anything but ordinary.
Beyond the obvious honeycomb character, the chocolate also develops a sweet, floral note that is difficult to place precisely, but which complements the honey beautifully. It is an elegant additional layer to an otherwise straightforward flavour profile, and one I particularly enjoyed.
