    Pump Street’s Sourdough & Sea Salt bar pairs two of the maker’s signature strengths — dark chocolate and their own Suffolk bakery — using sourdough breadcrumbs and a touch of Halen Môn sea salt embedded in a 66% Ecuadorian dark chocolate. To their knowledge, it’s the first bar to combine chocolate and sourdough in this way, and the concept largely lives up to the idea.

    The real strength here is the crunch: the sourdough crumbs bring genuine texture and a malty, breadcrumb character, while the salt is judged well, adding savoury depth without overpowering. Together it works better than the odd-sounding pairing suggests, and there’s real flavour here — closer to chocolate on toast than a novelty inclusion.

    Where it falls slightly short is the chocolate itself, which lacks the velvety creaminess of a top-tier bar and disappears from the tongue faster than expected. It’s an enjoyable, moreish change of pace rather than a bar for chocolate purists, and one that’s easy to eat through quickly. Not necessarily a repeat purchase for those who prefer chocolate on its own terms, but a well-executed novelty worth trying.

    This dark milk chocolate from Pump Street is rich and creamy, opening with mellow honey notes alongside a wave of buttery smoothness. Despite the relatively high cocoa content for a milk chocolate, it never loses that comforting creaminess — the extra intensity simply adds depth rather than pushing it towards dark chocolate territory.

    The rye crumbs are generous and genuinely transformative, bringing a nutty crunch along with savoury hints of malt and hops that set this apart from a straightforward salted milk bar. A touch of sea salt rounds things off at the finish, sharpening the sweetness without overpowering it. The aftertaste lingers with a buttery, mildly nutty character carried through from the rye bread.

    Compared to other Pump Street bars, this one feels more intense and a touch more serious — less of an easy, casual eat and more of a considered, layered bar. That said, it loses none of the enjoyment: the combination of creamy milk chocolate, malty rye crunch and a well-judged hit of salt makes for a genuinely satisfying, moreish bar.
